I honestly wake up in the morning thinking about these chicken bowls.

Yes, I'm still here, still talking about that air fryer chicken, but this time it's in bowl form and there's a new sauce in town.

We had these chicken bowls for dinner tonight, and Bjork covered her golden, juicy, and still-warm chicken strips with that tangy Calabrian chili sauce and declared it the the best chicken I've ever eaten. And as soon as I open my eyes in the morning, one of my first thoughts upon waking up is: “YES, I will get to eat that bowl for lunch again today.”

This bowl is like a little symphony: the crunch of tomato and cucumber salad, thin strips of bite-sized red onion, crispy golden fried chicken cut into tender strips, a big mound of perfectly chewy Banza, and a heavy pour of spiciness Calabrian chilli sauce on top. I'm drooling.

If you need to scale it down and make it simpler with fewer items, go for chicken with sauce and salad. Or chicken with sauce and Banza.

Or, really, just the chicken with the sauce. That Calabrian chili sauce is at the center of everything.

January is long, but this bowl, for me, has been one of those super happy meals where I'm excited to eat it AND feel good about the actual nutrition in it. For example, one of those meals that I look forward to and becomes the highlight of my day. Full belly, taste buds so exceptionally happy. I hope you like it!
